
Grilled Chicken Kabobs With Mushrooms, Zucchini And Peppers
The name says it all. This is a great way to grill chicken, very tasty and rather simple to make.

The Marinade
- ⅓ cup olive oil
- 1 lemon juiced
- 1 tbsp Sriracha
- 3 cloves minced garlic
- 1 tsp table salt
- 1 tsp fresh ground black pepper
- 1 tbsp chopped parsley
- 1 tsp dried oregano
The Kabobs
- 2 boneless skinless chicken breasts cut into pieces
- 6 – 10 small baby bella mushrooms
- 2 medium bell peppers
- 1 zucchini sliced into 1/4 inch thick rounds
- 6 skewers
- Canola or Cooking Olive Oil spray
- Sriracha Dipping Sauce
Instructions
- Prepare the marinade at least 6 hours before cooking the kabobs by mixing all the marinade ingredients together. Place the chicken pieces in the marinade an make sure all the pieces are covered completely.Cover and refrigerate for at least 6 hours
- I like to use 2 skewers for each kabob. This makes it much easier to flip the kabobs, so thread meat, peppers, zucchini and mushrooms onto skewers alternately.
- Spray the grill grates with a high temperature cooking oil, then preheat to high and place the skewers on the grill.
- Continue to cook on direct heat for 15 minutes, flipping the kabobs every 2½ minutes. making sure to grill each side of the kabobs
- Serve it up with the awesome Sriracha Dipping Sauce
